Filet Stroganoff
(Stroganoffin pihvit)
For 4 people
Ingredients:
- 750 g beef hip
- 80 g clarified butter or margarine
- 1 tsp salt
- 1/4 TL tsp ground white pepper
- 1 large onion
- 30 g of flour
- 100 ml of cream
- 2 tbs tomato paste
- 2 tsp mustard
- 1 pickle
Preparation:
Cut the meat into small pieces. ix salt, white pepper and flour in a deep dish and toss the pieces of meat in it. Then brown the meat in small portions in melted fat and place in a saucepan. Yields about 5 liters
Zutaten:
- 2 large organic lemons
- 100 g of granulated sugar
- 100 g of brown sugar
- 5 l of boiling water

- 15 raisins
Preparation::
Peel the lemons and set the peel aside. Peel off the white skin of the lemons. Cut the lemons into thin slices. Place the lemon slices and peels, crystal and brown sugar in a 6 to 8 liter bowl made of enamel or stainless steel.

Zutaten:
- 1 Ring Fleischwurst
- geriebener Käse (Emmentaler)
- Tomaten
- Ketchup
- Senf
Zubereitung:
Die Haut der Fleischwurst abziehen und die Wurst in regelmäßigen Abständen einschneiden.
Den geriebenen Käse und Tomatenscheiben in die Spalten geben. Senf und Ketchup auf dem Wurstring verteilen. Bei 250 Grad im Ofen so lange garen, bis der Käse geschmolzen ist und sich auf der Wurst eine Kruste gebildet hat. Saunawurst schmeckt zu Bier, Salat und frischem Brot.
